FAQs
How many meals do you make?
I have two adults in my home, so we plan for 5 4-serving meals to have dinner and lunch for every weekday.
Nutrition Facts .
Nutrition facts are my best estimate using online resources.
Serving/Reheat Temperatures
Chicken should be served at 165 degrees, ground beef at 160 degrees, beef and seafood at 145 degrees. Leftovers should be heated to 165.
Time/Money Savers. .
Herbs (like basil and cilantro) in a tube are a huge time and space saver. Buying herbs and spices in bulk can save money, so I shop at Winco for spices.
Substitutions
Ground Turkey
Ground turkey can be substituted for ground beef or Impossible ground “meat.” Note that ground beef will have extra fat to drain during cooking.
Herbs/Spices
You can substitute dried herbs for fresh ones in a pinch. Look up each herb you want to substitute to find the best way to include it in the dish.
Pasta
My recipes ask you to cook pasta based on the package instructions. This is so you can substitute whole wheat or gluten free pasta with no issues.
Spice Level
I like things pretty spicy, so if a recipe calls for what sounds like a lot of spice (cayenne, pepper flakes, red curry paste etc), you can half the ingredient amount. I don’t suggest removing the spice completely because it can affect the flavor.

Apps/Websites for Nutrition/Planning
For my own meal planning, I love using MealBoard. It has a website, an easy to use interface, and it is accessible on all devices using the same login information. I’ve noticed other meal planning apps charge more to use their app on an iPad or don’t offer a web option, which is very limiting. The only issue with MealBoard is that they currently only have an app for Apple products. Their website is great, but the app is more user-friendly. Once you get used to following a meal plan, I would suggest using this app if you want to take over your own planning.
For nutrition info, I use Cronometer. I learned about this site in one of my nutrition courses in 2025 and found it to be great for accurate information. Sites like LoseIt are absolutely wonderful, but rely on user inputs a lot, which makes it less reliable. Cronometer uses trusted sources for their data, which is why I trust them. It is time-consuming to add a recipe, but if you want to track your macros or micros, it’s a great tool.
